The Market

The Market has always been the heart of Terra Madre and Salone del Gusto, a meeting place for thousands of small-scale producers from across the globe and for hundreds of thousands of visitors, serving as a showcase for the extraordinary gastronomic diversity of every continent.

In line with the event’s objectives, it will be necessary to work on identifying the exhibitors, adopting more selective criteria than in the past, to ensure that they are all as representative as possible of the philosophy of the Slow Food movement and our policies, and can become ambassadors for our message.

• for the defense of biodiversity, the promotion of eco-friendly agroecological practices, the protection of soil fertility, the protection of the landscape, respect for animal welfare, the defense of raw milk and the promotion of sustainable fishing practices;

• for an increasingly reduced use (and hopefully eventual elimination) of synthetic chemicals in agriculture (fertilizers and pesticides); GMOs; the use of artificial additives, preservatives and colorings; food waste and the excessive use of packaging and disposable, single-use containers.

This is why Slow Food has developed new guidelines for Terra Madre Salone del Gusto 2018 that will define the requirements for participation in the event.

You will find general rules (for example, products must not contain GMOs; packaging must be minimal, easily broken down and recyclable, etc.) and specific guidelines for different product categories: cheese, cured meat/charcuterie, fruit and vegetables, fruit and vegetable preserves, fish and seafood products, flour, bread, baked goods and sweets, dried pasta, fresh and filled pasta, rice, honey, chocolate, cacao based products, coffee, tea and infusions, extra virgin olive oil, other oils, wine vinegar, fruit vinegar, balsamic vinegar, salt, wine…
