Time for Italian Apples

Apple cultivation has a long and glorious history in Italy, and can be traced back at least as far as the Early Middle Ages.

However, modern agricultural development has unfortunately made a drastic selection, prioritizing mainly the foreign varieties of apples that the market prefers: larger, more visually appealing and better suited to industrial cultivation and commercialization. But all is not lost. In many areas, historic varieties have survived: flavorful, aromatic, rustic and resistant. In this event, we will put them to the test in pastries prepared by Marco Sforza, talented young baker. Savor the multi-colored heritage of heirloom varieties from Piedmont, Friuli and the slopes of Mount Etna, pink Sibillini apples from the Marche and the Decio from Belfiore in Veneto.

Paired with the Moscato of Mongioia (Valdivilla, Cn) and La Spinetta (Castagnole delle Langhe, At) wineries.
