Ukraine: Vegetarian borsch – Meatless Monday

Born in Ukraine and popular in all the Slav countries, borsch, the traditional beetroot, vegetable and meat soup, comes in many different varieties, some without meat.

Here an incredibly fresh, tasty vegetarian version will be served by members of the Slow Food Chefs Alliance in Ukraine, who will also prepare ogirki, a ritual Podolian specialty made with many local vegetables.

Paired with Timperosse Terre Siciliane IGT 2017 and  Mandrarossa Santannella Terre Siciliane IGT 2017 of  Cantine Settesoli, Menfi (Ag).
